I started my younger son on the diet today, as I wanted to get a few days in on Vacation, before he goes back to school, without PB+J! Today was so hard for him, he didn't really ask for or cry about the food choices, except at dinner for a minute, but he had a horrible day behavior wise and just cried a lot, which is not like him. He wasn't happy about much today, and we even went to the movies. My older son is on the diet, he's a Celiac, so at least they can do this together, but it should be interesting for a while here. I need to buy it from somewhere, but I can't find it! Help would be great! So many other health issues with both boys, please do not try to teach me the bread maker, as I don't have the strength. Laurie PLEASE DO NOT GIVE UP ON THE BREAD MACHINE I have adapted the white bread recipe to work in a 1+1/2 pound bread machine. Just try this once and see if it doesn't work. It will certainly be cheaper and more reliable source of bread. I make wither the White Bread or the Bean Bread (recipe follows white bread) everyday and our entire famnily eats them. Soft White Bread Recipe - WonderBread- Modified for 1+1/2 Pound Bread Machine In a large bowl, combine dry ingredients: Modified Original Recipe 1 ½ c 2 cups white rice flour - or bean 1 ½ c 2 cups tapioca flour 1/3 c 2/3 cup DariFree powder >1/8 c 1/4 cup sugar 2 tsp 1 1/2 tablespoons xanthan gum 1 tsp 1 ½ teaspoon salt 2 tsp 2 pkg Red Star or SAF yeast (4 tsp yeast) In a smaller bowl, combine wet ingredients: Modified Original Recipe 1 1/3 c 2 cups warm water + a little while mixing if necessary >1/8 c 1/4 cup oil or margarine 1 ½ tsp 2 teaspoons rice vinegar 2 2 eggs, beaten Beat dry ingredients with Kitchen Aid, slowly adding wet to dry until well blended. Beat at high for 2-3 minutes. Dough should be soft, but stiff. If soupy add tapioca until peaks hold their shape. Thicker than cake batter, but stickier than regular bread dough. Grease 2 loaf pans. Fill 1/2 full. Let rise 1 to 1+1/2 hours. Avoid over rise. Sprinkle tapioca flour on top. Preheat to 400. Bake 50 minutes, cool before slicing. Immediately slice and freeze any bread not eaten first day. Modified for 1+1/2 pound bread machine: Place wet ingredients in machine pan. Add dry. Top with yeast. Select #2 Basic Dark Crust 1+1/2 LBS. Start machine, digital time will show 3:20. Leave cover open. While dough is mixing, scrape down the sides of the pan with water dampened yellow spatula. After mixing time will show 3:02, remove mixing blade with dampened thongs, smooth dough, close cover, and let machine run until it stops in 3 hours. Immediately remove bread from pan, cool on rack and EAT! Sharon's Bean Bread Recipe for 1+1/2 Pound Bread Machine Dry Ingredients: Mix all together. 1 cup Dried Beans 1 cup Tapioca Flour 1 cup Corn Starch 2 tablespoons Flax Seed 1 tablespoon Rice Bran 2 tablespoons Calcium Powder 2 teaspoons Xanthan Gum 1/2 teaspoon Salt 1 teaspoon Unflavored Gelatin (Knox) 1 teaspoon Ener-G Egg Replacer 1+1/2 tablespoon Fructose Powder (Featherweight brand) Wet ingredients; place all in one bowl, and mix well: 2 Eggs 3 tablespoons Oil 1 teaspoon Rice Vinegar 1+1/2 cup Warm Water (maybe a bit more if needed to look like cake batter) Pour wet ingredients into bread machine pan. Slowly and carefully pour dry ingredients over the wet ingredients. On top of dry ingredients place: 1+1/2 teaspoons Dry Yeast (Saf or Red Star Brand ONLY) Plug in bread machine. Select #7(Quick Rise) by pushing Select several times. Push Start. The digital display will light up 2:50 and begin mixing. Leave the top open and stand by with the yellow spatula, pair of tongs, and a bowl of cold water. Run the dampened spatula around the inside of the bread machine bowl to scrape down the dough several times during mixing. At 2:32 the machine will stop mixing. With dampened spatula, move the dough away from the center dough mixing blade until blade is clear of dough and you can remove it using the dampened tongs. With dampened spatula spread dough back into place and smooth top. Close lid and return in 2+1/2 hours to remove bread from machine and pan. Remove bread immediately when the machine stops or it will get soggy and be no good. Place bread on rack to cool. Makes 1+1/2 pound loaf of bread.
