I know that we usually avoid lactate, but I have heard that it can be derived without casein...anybody able to tell me if we can eat this or not? Guest guest Posted March 6, 2001 Report Share Posted March 6, 2001 Hi I had a similar question regarding Applegate Farms turkey bologna, which contains *sodium* lactate, and the company told me that it is derived from corn and beets, and I have heard that it has similar properties to potassium lactate and calcium lactate (the calcium source in Minute Maid orange juice). So the chances are very good that it is NOT dairy derived. My further suggestion to you for verification (besides the company) is to search dairy free sites or kosher sites, because they discuss this very subject.
