Electric knifes are wonderful, i don't try to cut my bread without one.

I found that sometimes if I put too much water in my bread I get a gummy

side, and it also sinks, if you have a gummy crust and it sinks try reducing

your water....

Another thought - try using fine dental floss with your slicing guide

to cut the bread - just " saw " it back and forth to avoid smooshing.
