Do you sub equal measure of applesauce? If a recipe calls for 1/4 cup of

oil, would you use 1/4 cup of applesauce? And could you use baby food pears

instead of applesauce, or is that pushing it?

pear sauce can replace applesauce for those who cannot use apples.

All my experience with applesauce substitution is with wheat baking, as we're

new to gfcf baking. We found that 1:1 substitution worked well, and we quickly

came to prefer the lighter consistency of our baked goods (we used all whole

grain flours). We got to the point where we often doubled the amount of

applesauce in muffins and such, just to get more fruit into our son who would

eat nothing but bread.

I imagine you could use pears, as there is an expensive product available for

oil substitution that uses plums. We've begun making our own applesauce as the

organic kind is rather pricey. Freezing it works well, so canning isn't

necessary.
