I don't have any and really want to make this...will another flour work. I have white and brown rice flours,ener-g pure rice flour, potato flour, potato starch, soy flour, bean flour, gluten free blend, and tapioca flour...will anything on hand work? Thanks for your help!! Guest guest Posted February 12, 2001 Report Share Posted February 12, 2001 I got sweet rice flour in the oriental section of my supermarket,where all the soy sauce and chinese food is.It was on the top shelf and I almost didn't see it. I used the chocolate cake recipe out of lewis's book,followed it to the letter.Well, the batter was REAL thick and I was skeptical,but I baked them. They turned out all gummy.What did I do wrong? Could that be it? >>> The GF Flour is a combination of three flours, usually its Tapioca flour, tapioca starch and rice flour. I use the Betty Hagmans from Miss Roben's when I want a GF Flour. Don't feel to bad about them not turning out because I just made some brownies that were suppose to be chewy and soft, well they were hard and crunchy! Guess I'll add them to the other door stoppers LOL I wasn't a cook before this diet and so far I can't seem to get this cooking thing right but on occasions I have gotten a few things right. I made the same mistake, too, when we first began the diet (since Sweet Rice Flour from the grocery store Asian foods section was much cheaper than regular rice flour from the health food store.) Actually, Bette's mix (which I use a lot, too) is 2 parts rice flour, 2/3 part potato starch flour, and 1/3 part tapioca starch flour. I make it with 6 cups of rice flour, no fractions!
