Guest guest Posted February 19, 2001 Report Share Posted February 19, 2001 If I recall correctly, maltodextrin and modified food starch can be safe (if made from a gluten free grain, like corn, which they often are made of) or not (if made from a gluten-containing grain, like wheat.) If a food made it to the safe list, someone probably checked the gfcf status of the ingredients. In the US, I have found that US made candies almost always are made from corn and more corn (corn syrup, corn-based modified food starch, etc) but check to be safe. At a restaurant-supply store, I picked up a jar of " modified food starch " and read the fine print, which said the only ingredient was corn...but that means only that this particular brand was safe.
