We have been pretty much casein free for several weeks, we had one infringement, and are still working on gluten. I plan on eliminating all gluten during spring break. I'd like him to have any bad reactions while he is at home and not school. The school is supportive and so are the people from Community Mental Health who set up his therapy program. They all acknowledge that this is one of the toughest things to do for autistic kids. We also have an appointment to see Dr. Amy Holmes in August. The only time gets any gluten is in his sandwich for lunch. Now, the school is telling me that he is devouring his sandwich and can I send two. I said no. I send a gluten one and a non-gluten one. I don't think he's that hungry, I think he wants his " fix. " So, I think that we will see some progress with the diet when I can switch him over. I am still working on perfecting my bread making skills. Boy, we all seem to have lots of those bricks in the beginning! I went to our only health food store and they don't carry much gluten free stuff. They don't have much of a request for it. But, I am flying to Arizona in a couple of weeks and they have a Traders Joe there. Any advice on what I should bring home to try? My dad can buy the stuff for me later on and ship it to me. I had great success with my brownies, I adapted a recipe that I use, and great success with molasses cookies. One again I just substituted out the gluten and casein. So, I am encouraged! And, I finally had a good excuse to buy one of those big (Tim the Toolman ) size Kitchen Aide mixers! More power!! Arr Arr Arr!!
