I find leftovers are a great way to spice up the old sandwich or rice cakes

routine. My child eats lots of veggies, so if there is some rice pasta left

over, I throw in whatever leftover veggie is around. I try to use the old

" main course, fruit or veggie, and if available something sweet. " I do try

to keep applesauce and some packed fruits I have found that do not seem to

have any additives or enhancers. That is a great backup if I don't have time

to cut up pears or carrots.

If I don't have an approved sweet, something crunchy is a nice option

such as chips or mini rice-cakes. Her class has a microwave which makes

leftovers nice. But even without, many kids do not mind cold chicken nuggets

cut up in a sandwich or gfcf soft tortilla.

Do whatever is important to your kid (to borrow ' insight): if

looks are important, be sure colors, etc are included. Mine thinks taste is

more important. As long as your kid is eating what you are sending, you are

doing a great job--maybe you are the only one who thinks the menu needs more

variety.
