I can't vouch for it because today is the first time I've tried them and they're not finished yet. One thing...I put an extra 1/2 cup sugar in because the dough tasted a little bitter. in Ohio Pop Tarts 2 1/2 cups GF Flour mix 2 tsp Xanthan gum 1 Cup Sugar 1 Cup CFGF Margarine (softened) 1 Egg 1 tsp Baking Powder 2 tsp Fruit juice (or water) 1 TBL Vanilla Combine all ingredients and beat until well mixed. Put in plastic bag and place in refrigerator or freezer until firm. Roll out the dough on rice floured surface. Cut into cookie shapes (rectangles, circles, whatever you prefer). Place on ungreased sheet and smear favorite jam or jelly on half of cookies. Place a cookie without the jam on top of one with it and bake in oven for 6-10 minutes or until slightly brown around the edges. Be sure and seal your edges when you place one on top of the other by pinching the dough together or all of your jelly with boil out of the cookie onto the cookie sheet.
