Maybe something I could mix up ahead of time and then just add the wet ingredients as needed. Also a homeade muffin mix would be great. We used to love the Jiffy Mix muffins and miss them. Has anyone found anything similiar to this? I feel like we are eating way to much rice cereal and eggs because we don't have enough breakfast ideas. My husband, who hates all of the GFCF stuff loves these. 2 cups sorghum flour 2/3 cup potato starch 1/3 cup tapioca flour 3 tablespoons sugar 2 teaspoons xanthan gum 1 tablespoon baking powder touch of salt Mix above well and set aside. In separate bowl mix: 2 cups water 1 cup milk sub 3 eggs 3 tablespoons oil 1/2 teaspoon vanilla Combine with dry ingredients and cook on griddle until done. These are great. I just ordered 3 bags to store in a large container, then I just have to add the wet ingriedients.
