Mealtime can be fun and decorative (which appeals to my little guy). I have a baking pan to make donuts and I use this to make mini meatloaves and in the hole I eaither put mini cornsticks made from cornmeal and water or you can put a scoop of mashed potatoes or macaroni in the center hole. idea #2 - french toast is made with bread that has been cut out into various shapes with cookie cutters idea #3 - homemade corn dogs with Applegate hot dogs idea #4 - homemade meat patties. Tonight will be my first time making the soft pretzel mix from Miss Robins but I also am going to experiment wrapping the pretzel mix around hot dog and filling some of the mix up with a chopmeat mixture and sealing it like a turnover I would say we eat a different meal for lunch and dinner for at least a month before we have to repeat it. Experiment and HAVE FUN. I've been preparing dishes GFCF, portioning out what my kiddo gets (we only have the one kiddo), then adding the " naughty " things in for hubby and me. It works really well depending on the dish. For example: Spaghetti sauce prepared gfcf, ladled onto rice noodles (Mai Fun noodles -- yum!)... Then, I add the parmesan, a little red wine, and cook some spirulina noodles for the grownups. Then there's scrambled eggs (if they're an option for you), with potatoes and herbs I dried myself (be careful not to use freshly dried herbs), fried in olive oil. The guy gets his portion, then I add some butter and cheese for my dh and I. You could adapt this to a lot of dishes. Chili, soups, casseroles... You could serve paked potatoes and offer non-gfcf toppings along with the good stuff, There are so many options if you analyze the recipie. Try to cook things where the non- gfcf element is not crucial in the preparation, and is really more of a topping, or something that adds flavor. Right now his diet consists of darifree potato milk, french fries, chicken nuggets, pretzels, choc. chip cookies, donuts, popcorn, and occassionally raisens. When we first started the diet he was living off of french fries, cupcakes, and cereal. His diet has changed very little over the past 8 months of the diet. He has accepted a few new items, however they always seem to replace something else he has decided to give up. It took 6 months to find a chicken nugget recipe he would accept. But part of that problem was they did not look and taste like Mcs chicken nuggets. He finally ate them after I stopped trying to duplicate Mcs. He also starting eating Mcs quarter pounders. I'm still tying to figure out if this is a food he can tolerate. It looks like he can about once a week. I still feel he eats a healthier diet than he use to. He gets lots of supplements and vitamins, something that he was'nt getting before. I don't worry to much about the variety. I just keep trying different recipes and hope something appeals to him. His meals are always different than the rest of the family--we are not GFCF.
