I have a 9 yr old son who has a long-standing cow milk intolerance (it causes asthma) and we have just learned that his refusal to eat anything but bread products was a symptom of a possible gluten intolerance. We've plunged into the GF part of the diet and are astonished at how insidious wheat/gluten is. We had a slip a week or so into the diet and had such a strong reaction that we can see that he really does have an intolerance. We consider ourselves fortunate that our sons can tolerate goat milk. I have some questions, and since I'm new, the rest of you probably already know the answers, so private messages (mailto:lis@...) are fine. What are the enzymes I keep reading about?
