Hi everyone!

Just passing on a new find for us. We've been enjoying something

called " Pasta Polenta " which is a dry corn pasta made by e

Pasta Products. We've tried the Garlic and Basil version, which is

shaped somewhat like ziti, and the red chile and garlic version which

is a rotelle shape. The kids really like them and even my husband

who is pretty finicky about GFCF food. They are only made of

corn, salt, and the spices (ex. for the red chile it's cilantro,

cumin, oregano, dried red chile , and garlic powder) Found these at

two of our local hfs. The are Kparve. They are tasty enough my kids

even like them with just a little GFCF margarine.

Also, I had a big hit the other night with the " quickie " fake

breadsticks I made. I took several slices of their rice bread (in

this case Taste of Life) and sliced them length-wise into 4 strips.

I melted a little GFCF margarine and added some spices (I used

Frontier Pizza Seasoning, which I love) and brushed a small amount of

the mixture over the strips. Then I baked them in the oven for about

10 min. until they were heated and starting to crisp, and finished it

off on broil for about a minute or so. The kids devoured them with

our GF pasta dinner and they were a lot easier than when I made my

own breadsticks. Sometimes simpler works better!

Thanks for all the hints I get from you people!
