I was wondering if I should start substituting items one by one this way it is not such a shock. I know this will take longer but they will be eating this way pretty much for the rest of their lives. I want to make sure it becomes a habit. I slowly removed the gluten from my son's diet over the course of 4 weeks. I tried to offer more non gluten items and slowly weeded out things like pretzels and subsituted the gluten free version. But now 10 months later I know I am 100% GFCF free, color and preservative free plus my son is allergic to soy. Stick with this site and you'll pick up some great recipes here too and learn alot.
