This recipe is on the front of " bob's Red Mill " Stone ground Golden Corn

Flour Masa Harina

Combine 2 cups Corn Masa Harina (contains stone ground corn, lime and corn

oil) and one cup water. Mix until dough forms ball (add one or two TBS

additional water if necessary). Shape into 14 balls and cover with moist

towel to prevent drying.

Place ball between sheets of plastic and flatten to 6 inch disc. Bake on

ungreased griddle 30 seconds, turn, continue baking 1 minute, turn continue

baking 15 to 30 seconds. Should be soft and pliable when done.

I know that some people have had concerns about this companies' possibility

of cross-contamination, but we've not seen any problems.

This recipe for Gluten Free Tortillas is from ' book: 'Special

Diets for Special Kids'

2 cups Gluten Free Pantry French Bread/Pizza Mix

2 tablespoons shortening

1 teaspoon GF baking powder

1/2 teaspoon xanthan gum

1/2 cup water, very hot

Combine the first four ingredients and cut shortening into the dry

ingredients until crumbly (mixture resembles a pie crust).

Add the hot water and mix until a smooth ball is formed. Invert on a

lightly (rice) floured work surface, let rest 5 minutes.

Pinch off golf ball sized pieces of dough and roll them out into circles

6 " to 8 " in diameter.

Heat an ungreased griddle to high. Place tortillas on griddle and bake

just until a bubble appears in the center. Flip over and cook just

until done, less than a minute.

These can be frozen and reheated on a hot griddle or fry pan, but they

do not reheat well in a microwave. Makes 10-12 tortillas.

I've never tried this recipe myself yet since we prefer corn tortillas

here but I hope they work for you!

Does anyone have a good gf/cf quiche recipe? My DS loves eggs and I

would love to try to make one but never have so dont know exactly

how. Oh and by the way bean milk sounds good to me too, I think I

will be trying it this weekend during one of my cooking fests, thanks

for the idea!

Here's a Quiche that I've had.

1 9-inch unbaked gf pie shell

1 cup shredded cf cheddar cheese

1 cup shredded cf mozzarella cheese

1/2 pound bacon, chopped

1 small onion, chopped

dash of pepper

dash of garlic powder

5 eggs, slightly beaten

1/2 cup (or more) of milk substitute

In skillet saute bacon and onion in olive oil until crisp. Place a layer of

cf cheeses on the bottom of pie shell. Place bacon/onion mixture over the

top; add remaining cheeses over the top. Mix spices with egg and milk

substitute then pour over all. Take a knife and make sure the mixture seeps

into the bottom. Bake at 375 degrees for 40 minutes or until knife inserted

near middle comes out clean. Serve at room temperature.
