Guest guest Posted January 14, 2005 Report Share Posted January 14, 2005 Breakfast: Got to be eggs, cheese, and sausage, and/or bacon, with onions, peppers, mushrooms,etc.. If you're avoiding processed foods, scratch the bacon, and note that some sausages (Brown n Serve, for example) don't have nitrites. I use Egg Beaters almost exclusively, they're actually 99% egg whites. You could probably avoid the meat completely. Alternative is strawberries and cream, with Splenda or your favorite non-sugar sweetener if you wish. Strawberries and other berries are REALLY low in carbs (but not " free " ) Lunch: Cold: Tuna salad, with celery sticks (no carrots though) Hot: Burger (beef or whatever) with cheese and onions Dinner: Salmon with cucumber salad Creamed chicken - no flour, use cream and some cheese to thicken Snacks: There are some snacks that " aren't recommended for Phase I " of the Atkins diet, but we've managed to sneak in a few: 1) Low carb oreos and chips ahoy - 6 g of carbs for two cookies, keep to two a day for Phase I. I swear, the oreos taste like the real thing! 2) Low carb ice cream - 3 g for a 1/2 cup serving - Turkey Hill is GREAT, they have a low carb peanut butter cup ice cream. 3) Celery - this is unlimited, IMHO - 1g net carbs for a stalk. I buy tons of cream cheese and other soft cheeses and dip away. 4) If you can take it, cold cuts, burgers, chicken - eat as much as you want!* 5) Well, it's not a snack, but: BEANS. But beans are high carb! Yes, unless you are black soy beans (by Eden)! They are very low carb, and full of fiber. If all that cheese is backing you up, throw some beans in your burger or stir fry, and increase your fiber. They are somewhat " chewier " than regular beans, so your black soy bean soup has a bit of grit to it. * What happens is that you manage to stay on the less than 20 g of carb diet for at least 2 days, your body goes into ketosis. Therefore, you eat like a P I G for two days, and suddenly your appetite decreases. This is noticed when you go from 6 eggs, 5 sausage, 10 bacon, and a half of pound of cheese for breakfast, to 1 egg and 2 sausages and a slice of cheese. All the numbers given are for products I use, be careful because some things say " low carb " and mean " 20 g carb vs. 60 g carb for the original " . What helped me the most is to use the Internet to look up various foods. I found out kohlrabi is relatively okay, and cauliflower is much better than potatoes, and strawberries are good. Just my experience, hope this might help someone. BTW, I never bought the Atkins book, used their website and other websites.
