Help! where do I go for supportive literature about cross contamination

concerning gluten.

Specifically about gluten from food handlers who handle wheated food

items and then handle gluten free food items which they then hand to my

son. This person will not believe there is a problem and I am trying to

hold my tongue and find something scientific enough to persuade this

person that it IS a problem.

I have quit using plastic bowls and utensils for gluten free food items

to aviod cross contamination in my kitchen and am working on clearing all

wheat products completely from the kitchen. This person and his cross

handling of food is driving me crazy.

HELP!!!!!!!
