Put in a Kitchen aid with 1 package of Mori Tofu, about 2 tsp of Fleishmans unslated, and about 1/4 cup of rice milk. Mix well, then transfer to stove and cook down until nice and creamy. I recently switched to the Soymage cheddar and it does melt nicely this way. Somewhere out there someone had posted this recipe, so I may have all these measurements wrong, I make it so often that I dont measure or read a recipe.
