Guest guest Posted February 9, 2001 Report Share Posted February 9, 2001 This is a very quick, simple idea for kids who like baked potatoes and their moms (like me) that don't like to cook, didn't cook beyond the basics (before the diet) or depended on fast food/convience foods. I have started baking several extra potatoes when I " do " baked potatoes. Then later when I want something different than just plain baked I pull the cold potatoes out. This recipe is very flexible and done to meet you/your child's tastes. 1. Take out 1 potato for each 2 servings desired. 2. Cut in half length ways and scoop out center leaving enough potato attached to the skin so it won't collapse. 3. Place scooped out potato in medium bowl. For Cheesey Potatoes: 4. Mix potato pulp with softened Tofutti cream cheese and/or Tofutti shredded or sliced cheese (or any other cheese sub you use), mashing with masher or fork. (You can add a little melted margarine to help the mixing. 5. Spoon mixture back into skins and place on micro safe plate. 6. Sprinkle with more cheese and microwave 1-2 minutes until heated through. 7. Place on broiling pan or pan for toaster oven and broil until toasted on top. For bacon and chive potatoes: 4. Mix potato pulp with melted margarine. 5. Spoon mixture back in, top with a sprinkling of chives and crumbled bacon (they could also be mixed in). 6. Microwave. 7. Broil. I thought I might try a salsa/Mexican potato next. You can add pretty much anything you like -- broccoli and cheese sub, chicken and salsa, chicken with some type cream sauce or any suitable leftovers you have. in Tallahasse Quote Link to comment Share on other sites More sharing options...
