Gives his body time to adjust and you time to learn the diet. I started pulling casein out of Evan's diet and took a couple of weeks to do that and then I started on gluten. Some pull out wheat one week and then rye, oats, and barely a week each after. I just started eliminating gluten period and did it slowly over a month. He did some extra stimming at school but he did not have major withdrawals that I know some have had. It also gave me time to work on menus and what to look out for at the store. I also used this time to weed out things that i had already bought. I experimented on cookies and cakes for him while we were doing this. Giving him gfcf treats while we were working it out.
