Guest guest Posted February 4, 2001 Report Share Posted February 4, 2001 Did you by any chance use any substitutes? Like egg substitutes? If so I would be willing to bet too much baking powder. We have since reduced the tips we give for eggs in GF baking using baking powder recipe to only 1 teaspoon of baking powder. When we test baked these ours came out great each time and FLAT. In fact I had trouble getting the girls and Roy (my husband) to stay away from it long enough to let the rest of the staff try it. Email me privately if I can be of more help.
