Jello and how to read labels

Hello, I have just received the results to my kids blood test for gluten and

casein. They were extremely elevated and the doctor told us to get them off

of gluten and casein immediately! He said normal levels are 0-100 and my

oldest's level on gluten was 1525 on casein it was 4200 / my youngest was

6500 on casein and 6200 on gluten. So now we are gfcf. I don't know what

words to look for on labels for the gluten and casein. Can anyone tell me

what words they use for these, what to look for that they cannot have? Also

can they have Jell-O? My youngest is very picky, he only likes certain

foods, he won't eat fruit or vegetables. I don't know how to get him to eat

what he can have, and not eat what he can't have. He is very good at

tantrumming.Please help me.
