Because I am new to the list, I have no idea what the rest of you know. I have some articles in my files with basic information for beginning people that I will gladly share. Even though some many of us know this information inside and out, some of these articles might help in teaching others about the disease. I have an intro to celiac disease that includes a list of basic foods and if it is GF or not. I have a list of safe and not safe foods and can post the link to an on-line site with the information. I get the newsletter from The Clan Society that covers gluten concerns. Anyone want to know more about it? I have articles on batch cooking and freezing ahead. Does this group need this information? So, if I have all this information, why am I here? Because I don't know didly! I have information, and I am still experimenting with recipes. It is easy to change my own diet, it only took me two years! Now I am helping two of my sons change their diets, and that is not easy at all. Also, my first grandchild is coming any day now in the next four weeks. His mother's family has problems with milk, eggs, corn and citrus. So I have lots more to learn - which foods come from corn - and need lots more ideas on converting recipes. I am here to learn. But if what I have learned is off interest to some, I am here to share.
