Trish, We have battled this a few times. My son just turned 9 and has been gfcf for 6 yrs. Certain fruits tend to trigger this we discovered at times. (Oranges, raspberries, and I forget which others seemed to be the cause at times; when we removed vanilla a few years ago we saw it had been a culprit for bladder retention too) Other times we could not figure out what caused it. Last spring we removed salycilates; when we began reintroducing fruits the bedwetting really got out of hand and even when he had no fruits for more than it week it did not stop. Finally I read about Omega oils and realized that Evening Primrose Oil (from my remembrance of what I read, so I hope I'm relating this accurately:) was helpful for the nerve endings and that helps a child know when his bladder needs emptying. That's how I explained this to my husband. I wish I could recall exactly where I read this. Finally we were having dry nights. Then in December we ran out of EPO and I thought we'd just wait until we went to town next. That night he wet the bed. We decided it was worth a trip to town for the EPO. I find that giving it only in the morning is not adequate for my son's needs, he needs it with supper to help the bedwetting. You can experiment and see what works best for you. I use Nature's Way cold pressed 500 mg capsules, 2 with evening meal. (I'd been using it in mornings for over a year and it had helped him in other areas as well, but adding it in the evening helped the bedwetting.) There is another brand we've used that has no contaminates but I forget it's name. I do not know if it comes in plain liquid form but you could pierce capsules if he won't take them.
