Splurge and treat yourself to a margarita on me!!! *grin* La lala la la OLe!! First key to success for this recipe is to have all the ingredients out on the counter before you start. When frying, you've gotta move kinda quick and you want to be prepared. Here goes: First make the flour mix 2/3 cup Garfava bean flour 1/3 cup sorghum flour 1 cup arrowroot 1 cup tapioca flour This makes 3 cups. You'll only be using 1 1/4 cups for this recipe (making 6 tortillas). You may double the recipe or save for later. Ingredients: 1 1/4 c flour mix 1/2 tsp salt 1/4 tsp guar gum 1/2 c liquid egg substitute (make sure it is GFCF safe...or you could use 2 eggs beaten) 1 1/2 c water 1 tblsp safflower oil 1/2 tsp fresh lime juice (optional) In kitchen aid mix dry ingreds. add egg and a little of water and mix. add rest of water, lime juice and oil. Mixture will be runny. Place bowl in fridge for 20 minutes. Heat a 9 " pan over high heat and brush with safflower oil (I use a mister filled with safflower oil). Give the pan a shake of sea salt before you put the batter in. Use a 1/3 c measure..it's the perfect amount. Pour 1/3 cup of batter in the pan and swirl it around. Cook it til the bottom is dry and it looks like the top is starting to cook (kinda like a pancake). Flip. We like ours brown...so I keep flipping til it looks good. Take it out of the pan and fill immediatly or cool on wire rack and store between wax paper. YUMMY!! Here's the meat filling: 1 # of dark ground chicken 1 tblsp fresh chopped cilantro 1/2 onion chopped 1/4 tsp cayenne pepper 1/2 tsp salt 2 tblsp green salsa 2 tblsp red salsa throw it all in a frying pan and cook. The meat isn't in a sauce like old way taco meat...but the meat is soooo flavorful. Top with lettuce, tomato, onion, etc. If you can do soy, use Tofutti cheese and sour cream. We can't do those and we didn't miss them. Here's my guacamole... Toss all this in a food processor 2 ripe avacados, peeled and pitted 1 juicy tomato 1/2 onion 1/2 tsp garlic powder 1tsp fresh cilantro salt 1/4 tsp cayenne Blend til smooth I love to cook and hate to clean..so most of my recipes are done in the same container. Anything that needs mixing goes in the kitchenaid. Anything that needs chopping goes in the food processor. No extra bowls, pans,etc. Since I cook everything that goes into Gillian's mouth and am baking all the time I don't want to do dishes.
