Guest guest Posted October 29, 2007 Report Share Posted October 29, 2007 I sympathize with you, Randi. It can be so rough to get kids to eat green veggies. Raw is always best, healthwise, but I remember sauteing them in butter or olive oil worked with my kids (if butter is ok). You might try coming up with a simple dip/salad dressing using a little flax oil and/or grape seed oil mayo. Stevia (Sweet Leaf) works well to give dressings a sweeter taste kids like without adding sugar. For vegetables, I'd definite try mixed green, leafy salads, snap & snow peas, celery, peppers, and fresh or lightly steamed & chilled green beans. Sprouts are probably among the best, but you may have to get creative making blended juices to get this to work. Including kids in a gardening process provided some really shining moments with getting mine to eat vegetables. Young pea shoots are really great in salads & can be grown in little containers in your windows. Sprouts might work for you, and growing them in a jar could be a great science adventure for kids, too. Letting them make their own salads or veggie finger food trays might also help. What was most frustrating for me was fighting my own social culture (schools, parties, etc.) - trying to keep heavily promoted, processed, sweet & artificially flavored foods out so their taste buds could recognize & appreciate whole foods. I really didn't know enough early enough & was too ill to remain as consistently positive with this as I needed to be. I do wish you well!
