The only thing I could find was that the 'fatty food' craving may be because of insufficiently digested fats. So the person may not be getting enough essential fatty acids. Or be absorbing or metabolizing essential fatty acids properly even if they eat them. This would be the job of the enzyme lipase. Most all the general broad-spectrum products contain some lipase. Enzymedica also makes Lypo which is higher in lipase than other products. Dr. Atkins company makes some enzymes designed for the high protein/high fat diet. This product basically has more proteases and lipase than others. Another possibility would be he is craving some amino acid, but I didn't find anything specifically that said a amino acid deficiency produces meat cravings. Also, yes nitrates do seem like a good idea. But again, I don't recall a nitrate intolerance producing cravings (they might, I just have never read that). Meat cravings seem to be common among vegetarians.
