Germaine Greer wrote a piece on it two weeks ago and she recommends that you cook it in boiling water and then (quote)'dress your steaming samphire with freshly squeezed lemon juice. If you don't, the chances are it will taste of salt and nothing else'. Mind you she also indicates that an awful lot of what is being sold is not true samphire.
