Usually when I have a big lunch which for me was Nacho Cheese chulupa and mexi-tators, I have a small dinner. Tonight it was an English muffin toasted with deli turkey, and a side of peaches. My blood sugar has been high for the last few days and I’m not sure why. Even with having what I did for lunch I’ve had before and it doesn’t affect my b/s that much. So nothing has changed except maybe the hotter weather, and extra pain/inflammation? There doesn’t seem to be any rhyme or reason to why it spikes when it does especially if nothing I’ve done is different. I hate the thought of having to go on meds. Lol…, no unfortunately I can’t stand or do much with my arms so cooking is done by Steve, and we try and pick recipes that require the least amount of work/prep time. So its Taco Bell’s nacho cheese beef Chulupa, and their Mexi-potatoes. They are quite good for fast food. I always ask for extra melted cheese.
