Yes, that's the good thing (or one of the good things) with sea salt, and herb salt, that it'll minimize the amount of salt you are using, without making things taste less. the concentration in flavour will do that.I think, in Sweden "Kleenex" is used as a name for the kind of tissues that come out of a box (like this one: http://casselhag.files.wordpress.com/2010/09/kleenex-box2.jpg ), but not for the kind sold in "pocket packs" (like this one: http://scenbloggen.com/izabellesand/files/2011/01/Softis_startsida_compressed.jpg ). The latter is referred to with the Swedish word for handkerchief ("näsduk" = literally "nose cloth"), although the full name would be "paper handkerchiefs" or "disposable handkerchiefs", to distinguish them from the textile kind. Yes!  Kleenex from the box is where the term started here, too.  And I think the pocket packs only come in Kleenex brand here, but I'm not positive.  Although we are a Puffs household, we still generally call them Kleenex.

The Iodine group suggests using unrefined Himalayan or Celtic salt.

The Celtic salt offered at the local health food store looked too white to be unrefined so I bought some Himalayan salt.

What a surprise to my taste buds!

I even like the suggested pre bedtime mix of 1/4 teaspoon Himalayan salt with 1/2 cup hot water - and there is no way I could drink table salt and hot water this way.

Now that you have reminded me about the Trocomere I will see if I can find that at my local shops. I used to like it in home made egg mayonnaise.

Hi Reb,

it is actually easier than you think - especially now it doesn't all have to be done by hand. Love my modern conveniences!

Try this:

Allow your eggs - one or two - to reach room temperature, then separate, placing the yolk(s) in your bowl (in my case the bowl of a Cyclonic Whizz) Add the juice of half a lemon and some dried mustard. Blend.

Measure one cup of oil - olive, macadamia, avocado or even coconut if the weather is warm enough for it to be liquid at room temperature. Do not used the refined golden oils.

While the Whizz is running add your oil VERY slowly. If you add your oil too fast your mayonnaise will separate. When all your oil has been added in stop the Whizz then stir through your choice of condiments (eg finely chopped parsley and/or shallots and/or crushed garlic and/or paprika and/or freshly ground pepper)

Use less oil if you want to make faux margarine. Will be good for four or five days if kept in the refrigerator.

Whether you are using a machine or doing it by hand, the yolk, lemon juice and mustard must be thoroughly blended (the emulsifiers) and the oil must be added very slowly while being blended.

IF your mayo does separate use it on hot potato salad. ;)
