Yesterday we had fried chicken breasts filled with my tomato pesto (sundried tomatoes marinated overnight in olive oil, balsamic vinegar, salt and pepper, then put in blender with some of the marinade, dry roasted cashew nuts, a generous amount of parmesan cheese, chopped red chili pepper, salt, black or white pepper and olive oil, and then mixed into a coarse and rather firm paste), french fries, a chili and lemon butter, and a coleslaw on the side. Not bad at all, really not bad at all... ;-)

Tonight we'll have pasta with the leftover of the tomato pesto (I always make too much...), some greek olives, and perhaps some salad.
