Ever since the first 'Lipid Hypothesis' which postulated that saturated fats caused increases in cholesterol, heart disease etc, less saturated fats have been eaten and trans fat (refined oils and margarine) consumption has increased, with the corresponding increase in inflammatory diseases - also known as the diseases of modern affluence. I have actually read through the Framington Study back when it was easily found on the internet and the official conclusion does not reflect the actual findings! Animal fats from correctly fed and raised animals are beneficial but animal fats from feed lot animals including barn raised poultry which never see sunshine are unhealthy. To oversimplify, their diets are too high in omega 6 oils (and hormones, antibiotics and pesticides) so they are suffering inflammatory disorders which are passed on to us. It is far cheaper for commercial meat factory enterprises to keep beef cattle for example in an area suitable for 1/100th the number and feed them on grains than ensure they are correctly pastured. The animal fats from these feed lot cattle are not healthy. In another forum a member stated that 'cover fat' - that under the skin of meat animals- stores toxins, and should be discarded. But beasts pastured and fed correctly - and not fed antibiotics and hormones to speed fattening and partially compensate for overcrowded and unsanitary conditions - have negligible toxins in their tissues. Modern day practices also mean it takes a chicken 4 weeks to be market ready instead of the 14+ weeks for organic chickens. Not good for the chicken OR you. "In men, PPAR problems are more likely to occur in vascular tissue, which is why atherosclerosis is more prevalent in men. But women metabolize fat differently in relation to their reproductive role. Disruption of lipid metabolism in women is more likely to affect the production of myelin and the central nervous system. In this way, MS is to women what atherosclerosis is to men, while excluding neither sex from developing the other disease." In addition to high cholesterol, there are several other risk factors for reduced PPAR function, including pathogens like Epstein-Barr virus, trauma that requires massive cell repair, and certain genetic profiles. In many cases, Corthals says, having just one of these risk factors isn't enough to trigger a collapse of lipid metabolism. But more than one risk factor could cause problems. For example, a genetically weakened PPAR system on its own might not cause disease, but combining that with a pathogen or with a poor diet can cause disease. This helps to explain why different MS triggers seem to be important for some people and populations but not others. "In the context of autoimmunity, the various risk factors for MS are frustratingly incoherent," Corthals said. "But in the context of lipid metabolism, they make perfect sense." Guest guest Posted December 26, 2011 Report Share Posted December 26, 2011 my problem comes down to this how do you do it when you are on disability and you get $10 a month for food stamps  - I am all for eating healthy and using herbs and vitamens to stay healthy - I am allergic to too many prescribed meds - I see a herbalist monthly and holler when something is not right  I don't have a medical doctor - the last one at the clinic stressed me to the point was sick for almost a month just 24 hours after cataract surgery  because I had an equally abusive visit at the other clinic 3 years ago I lost my neuro        :Thank you for such a detailed reply to the orginal post. Ever since the first 'Lipid Hypothesis' which postulated that saturated fats caused increases in cholesterol, heart disease etc, less saturated fats have been eaten and trans fat (refined oils and margarine) consumption has increased, with the corresponding increase in inflammatory diseases - also known as the diseases of modern affluence. I have actually read through the Framington Study back when it was easily found on the internet and the official conclusion does not reflect the actual findings! Animal fats from correctly fed and raised animals are beneficial but animal fats from feed lot animals including barn raised poultry which never see sunshine are unhealthy. To oversimplify, their diets are too high in omega 6 oils (and hormones, antibiotics and pesticides) so they are suffering inflammatory disorders which are passed on to us. It is far cheaper for commercial meat factory enterprises to keep beef cattle for example in an area suitable for 1/100th the number and feed them on grains than ensure they are correctly pastured. The animal fats from these feed lot cattle are not healthy. In another forum a member stated that 'cover fat' - that under the skin of meat animals- stores toxins, and should be discarded. But beasts pastured and fed correctly - and not fed antibiotics and hormones to speed fattening and partially compensate for overcrowded and unsanitary conditions - have negligible toxins in their tissues. Modern day practices also mean it takes a chicken 4 weeks to be market ready instead of the 14+ weeks for organic chickens. Not good for the chicken OR you. In Australia you can/ could order seeds specifically for sprouting, and much cheaper than buying the same weight of treated garden seeds. You could even sprout wheat berries to make your own wheatgrass juice if you had one of the tougher juicers. (haven't tried wheatgrass juice) - with that you actually use a little soil, grow the wheat on a tray, and simply snip a few inches off for use.
