Day one was a success, I was able to make a big change even before I made it

to the store to stock myself up on fresh foods. Today will be even better,

I'm making a big vat of fresh salsa to scoop up with celery and to pour over

some beans etc. That might sound funny but my salsa is so good I could have

it as a cold soup :)

Mickness can I ask you to give me some examples of what you keep handy to

eat?

I need some new ideas to inspire me. I like the idea of thinking of the

cookies and etc as poison. I'm doing it right now, That cookie on the counter

is a big fat PAIN pill, but it gives pain not takes it away.

About cooking in general,

I like to make large quantities when I cook and then freeze portions for

later. It really cuts down on the time I spend in the kitchen and keeps

everyone fed for a while.

Actually, I got alot of good tips on OAMC or once a month cooking lists here

on yahoo. Cooking ahead of time saves me alot of energy. While I can't quite

DO a total OAMC, I do get alot of benefit from some of their techniques. Then

again so does having someone else clean up after I am finished cooking ;) DH

and DS are wonderful about that, I think they are just happy to get my

cooking so they'll clean up HAPPILY.

Hi Jackie! Glad to hear day 1 went well. It is 9:38 pm, and your talk of

salsa made my hungry!!! I can't eat this late! I have veggie chips that I

love with Salsa, and it's all good! I know your plan is to do raw veg diet,

I applaud and respect you for that. I am including both raw and cooked

recipes however, because with most of my meals, I don't cook my veggies, I

barely steam them.

Favorites of mine for the summer...Please bear with me...I don't use recipes,

and I never have.

Greenbean almondine. My quick version...

Fresh greenbeans stir-fried in a WOK with Italian salad dressing. In the

cake isle of the store, they sell sliced almonds, you throw some of those in,

and BAM! Don't overcook the beans. You still want them to be crunchy.

There it is...LOL

Cream of Wheat with any fresh fruit is always good!

Spinach Salad (my supper this evening)...Fresh spinach in your bowl, throw in

some sliced almonds, croutons, tomato, add a hint of fat free or low fat

ranch dressing...or the dressing of your choice. Believe it or not, spinach

is very filling.

I don't know if you are doing any pasta or not, but carbs are good for

energy, and I have them in my diet. I love Angelhair pasta...After your

pasta is done...Get out the ol' wok and mix tomato's, your salsa, spinache,

and a hint of Sherry cooking wine. I also make my morning star veggie

burgers into meatballs and add them to this mix. Save the spinach for

last...it gets done QUICK!

Ahhhh....squash paks...Cut up some green and yellow squash in one to one half

inch squares. Put it in 12X12 in. aluminum foil with some Mrs. Dash

seasoning mix and pour some olive oil over it. Close up the aluminum foil

and put it on the grill. You can also do this with potatoes. Or, you can

mix and match and do this with just about any veggie. I also like Crazy

Jane's mixed up Salt and seasoning in this mix, but I have extremely low

blood pressure, so I can get away with that.

Shih kabobs...Even if your eating raw veggies, they still look better on a

stick! I usually sear mine on the grill for a few seconds.

Also, even if you hate animals, and you can't stand PETA...Go to their

website. You can request a free vegetarian starter kit, and it is packed

with tips and lots of excellent receipes, raw and cooked. You do not have to

be a member of PETA to receive this.

high fiber diet and almost died from the pain. Magnesium helps me a

lot more than fiber!
