I got this post from one of my other groups. Alot of good veggie recipes

going on there! But, here are some other vege books that may not be so

extreme as the raws...So, I thought I would crosspost.

More and more folks skip the meat

Vegetarian food is appealing to more and more mainstream taste buds.

“Natural and organic foods are the fastest-growing food category,†says Dr.

Seltzer, a food trend watcher and consultant to grocery retailers

and distributors.

A January report by Mintel Consumer Intelligence predicted that the

vegetarian food market will grow 100 percent to 125 percent over the next

five years. Vegetarian food sales, driven by all-out and occasional

vegetarians, topped $1.25 billion in 2001, according to Mintel.

If you´re already a vegetarian — or simply want more information in order to

plan the occasional meatless meal, here are some resources:

• Vegetarian Resource Group www.vrg.org — educates the public on

vegetarianism and other topics, including health, nutrition, ecology, ethics

and world hunger.

• VegeSource — www.vegsource.com — provides health and diet help for those

seeking a vegetarian lifestyle.
