Slightly over half-way down Dom's site http://users.chariot.net.au/~dna/kefirpage.html, there's a discussion that's titled The Microflora of Kefir Grains, which shows a pretty amazing complexity. If a person was casein intolerant, then they might have no choice but to do Primal Defense. Some people with ulcerative colitis or Crohn's disease might have a problem with some of the strains in kefir, like bifudis, but those people have really messed up guts, and I don't think you can generalize their experiences. >>>>>LAtely, I get the squirts almost everytime I eat.
