The professional cake decorating kind. It will look perfect. I promise. (no idea if it is scd legal but it may be close enough for these special occasions for your comfort) A little goes a very long way with those colorings so go light! I thought that I had read recently that chocolate cravings were related to (I think it was) magnesium deficiency! I am NOT positive and I can't remember where I read it, but I will look through my reading material and see if I come across it again. Does your son take any magnesium? If so, what kind? (oxide, glycinate, citrate, sulfate?) (By the way, magnesium oxide is not very well absorbed). For icing, I mix pure plum puree with unpasteurized honey. It is dark and spreads well like icing. It doesn't taste like chocolate, but looks reasonably brown/dark. I suppose it could be boiled first, then cooled, but I haven't bothered. The amount of honey seems to preserve it. It keeps for several days in the fridge. Molly, Sue's Fourteen Date Cake is my favorite of all SCD desserts and tastes very much like chocolate cake. And it is good with the Bavarian Cream Icing even though that is white. Since it is very concentrated in dried fruit serve very small pieces for those that are not advanced on the diet.
