Since there is no egg free cracker recipe at pecanbread.com and the bread

recipe is exactly the same as the brownie recipe (which leaves me slightly

baffled, LOL), I've had to go out searching on my own.

I haven't tried to do bread yet, but these crackers are good. I sub out

cashew flour for the hazelnut (because it's what I had) and change the

balance of the flours so that it's heavier on the almond. I'm trying to

replicate the incredibly delicious Digestive Wellness crackers. I roll it

out between layers of cut up ziploc bag and don't bother dusting with almond

flour. This is less messy to me. :-)

Can yur child eat cheese? Here is my favorite cracker:

Line a cookie sheet with parchment paper. Cut Swiss cheese into small rectangles

the size

of Wheat Thins' Bake at 350 15 minutes until edges begin to brown. Cool and

remove from

paper.

Hi...just wondering if I can use coconut oil or grapeseed oil(is this legal)

or sunflower oil instead of butter for the crackers?

Coconut oil can be used in any recipe that calls for butter.

Or if you are just avoiding casein, you can use ghee (which is casein

free, clarified butter).

how do you guys know that ghee is 100% free of casein? I ask becasue I am

looking to expand my daughter's diet but she is so sensitive to casein that

she reacts to very minuscule amounts and I am interested in understanding

better what I give to her before I try it. Any reading suggestions?
