The first patch was hard to do, but I kept doing it.It came out kind of runny, but worked. It is with the initial heating. I find myself keep skimming the " the stuff " off the top while I am heating the milk. And then it takes forever to heat to 180. Should I just not skim the fat off the top! What am I doing wrong? it Should I just not skim and let the " fat " on the top build up till the temp rises and then skim? What? Guest guest Posted March 4, 2006 Report Share Posted March 4, 2006 You don't need to skim the fat off the top and goat yogurt will be runny. I use whole goat's milk and it comes out much creamier. Also, while it is cooling, I cover the pot with a clean towel and the top layer will not even be there by the time it's cooled. It think if you cool it too fast or leave it open to air while it's cooling, then you will get the skim on the top. I just don't get the skim the way I do it.
