There is a recipe for Souffle Bread on page 134 of Grain-Free Gourmet. It is flat and can be cut into squares for French Toast or used in sandwiches. Seeds have cyanide and when you concentrate it with the seed butter you may be getting a bit too much for the body. Also keep note of how Lucas's stools are after the seed butter - that will give you an idea of how he tolerates it.
