It is made from cow's milk, and has a hard resiliant texture and a tangy, sour taste. It's legal and as stated above, great subsstitute for mozzarella which is illegal. Tjere is no refernce to it or the frequency it can be used on the cheese list in BTVC. I would think the non smoked variety could be used often if cow's milk cheese is well tolerated. Carol F.
