Yeah! I never thought of turning them into cupcakes! Sounds like a good

idea...and so cute too: " Ki Ki's Cupcakes! " Oh the cake is best cooking for 50

minutes instead of the forty I told you at first (changed it below....) I am

glad you enjoyed it...she can't tolerate nuts yet and the coconut if you turn it

into " dust " works!

When I cook with coconut flour I forgot to tell you I always add one banana

per one cup of coconut flour....I have had lots of success this way...oh and add

an extra egg.....it takes longer to cook a 9 by 9 cake 350 for 40 minutes! Here

is one of our favorites:

KiKi's Cake (I just invented...knowing my luck somebody else already

has....it works!)

2 Bananas and 6 strawberries (puréed)

1/2 cup honey

2 eggs

1t baking soda

2 cups coconut flour (real fine like dust)

1/4 cup shortening or butter (what ever you tolerate best)

Mix, put in 9 by 9 cake pan...cook slow 350 for 50 minutes WE LOVE IT!

Especially KIKI!

I made them with pinapple and used mini-cupcake pans and K loves them. She

would not ever eat pineapple before this! Thanks. Jenn & K 10 months SCD

can pecan flour work? My 2.4 daughter is sensitive to peanuts, almonds and

coconut. Any ideas?

My idea is do try it. I get wonderful results with pecans (grind 'em in the

Cusinart) The

best, very best are the muffins on page 122 of BTVC made using pecans.
