I think that adding veggies to meats is the best way to do it! I used to add

spinach, asparagus, carrots, squash, etc all to his hamburger/turkey burger

meat. You can also add squash, pears, carrots, cauliflower, etc to egg yolks

and cooked chicken (have you tried just the yolks?) and make pancakes. My

kids seem to react to egg whites but not the yolks.

My husband and I eat chicken, beef or pork (sometimes fish) 2 x a day 7 days

a week. My kids eat the same..we always have. I never thought it was bad to

do this?? What would you eat instead? If you look on FITDAY.com, I think you

will be surprised at how many carbs he is getting. For instance, my kids eat

chicken soup (pureed carrots in broth), hamburgers, chicken pancakes

(w/pureed veggies), pear sauce, and jello and there was a good percentage of

carbs.

I am still concerned that you are confused between the issue of

oxalates and the issue of salicylates.

If it is an issue of oxalates, then I would really suggest you join

the trying_low_oxalates yahoo! group.

I don't know of any reason to keep meat consumption down to 2 times

per week, especially if your child cannot tolerate eggs, nuts or

dairy. Meat is his major source of protein. Not that a diet needs to

be or should be HIGH in protein, but kids do need protein.

If you switch to GFCF, limit meat to 2 times per week-- what is he

going to eat? Mostly starch since he won't willingly eat vegetables.

I don't think a high starch diet is a good choice for an ASD kid.

I think the solution, no matter what the diet, is to come up with a

workable way to get him to eat vegetables. Have you read the

Overcoming Difficulties page on pecanbread.com? There is an excellent

link on that page on how to get picky eaters to expand their diets.
