Then, when finished cooking, drain the water if there is a lot left. The first time I didn't have much water left, and I didn't need to drain it. I just ate the apples pieces, rather than as applesauce (although later my 9 year old daughter came over and saw that I hadn't made applesauce yet, so she got out the potato masher and mashed up the apples!).
