My 2 year old twins were great responders, one more than the other. Recently they started a school program and have been stressed out at snack/lunchtime because the want the other kids' foods. I decided that I would give it a try, allowing them to remain gluten,casein,soy,corn and egg FREE but allow other grains and test it out. Within 1 week my daughter who was the great SCD responder completely crashed, massive diarrhea, abdominal distention, miserable, night wakings, gas...I couldnt have asked for a more clear sign that this diet was helping. Now I have to start over, but with a new resolve, now that I know that I am doing it for a reason... So...if anyone has recipes for cookies or breads that are SCD and egg free I need help!!!! He often in the past has had problems with his friends eating other foods. He still socializes quite often. I play a game where he puts picutres of " legal " foods in a basket and " illegal " foods in a " don't feel good can " . He now worries about his friends being sick! Because he knows how much better he feels eating " legal " foods! I know that we are bringing him up to be DIFFERENT...but is it going to hurt? AFter all even Elaine claims that this was the diet we as HUMANS where designed to eat...that all these breads, cookies and things made out of illegals.....cause all HUMANS to have diseases......not just us SCDiet " wierdos " . I use SCD legal Spectrum Shortning instead of the coconut oil (my daughter is Igg allergic to coconut) Last weekend, I substituted the coconut oil with Ghee (tastes a bit sweeter I think) and made two round cakes for my daughters b-day party. I made the PB & Butter frosting (also on the site) and added a bit of beet juice to make it pink. The kids liked it and my daughter felt " Normal. " Of course, you would need to use the superfine flour from Lucy's kitchen shop or Digestive Wellness. The recipes are below Eggless Almond Flour Bread-adapted by Brandee 2 1/2 cups almond flour 2 pears-pureed using food processor 1/4 to 1/3 cup coconut oil (or spectrum shortning or ghee) 1/4 tsp salt 1 tsp baking soda Preheat oven to 350. Put all ingredients into food processor except flour. Process until it takes on a " butter-like " consistency. Add almond flour adn mix until blended. Spread some coconut oil (or other oil) all around bottom of an 8x8 baking dish. Sprinkle a little almond flour on the bottom. Spread mixture into pan and smooth out. Bake 30 minutes When cooled, cut into squares (I cut the squares in half to make sandwhiches For frosting Sheila's PB & Butter frosting 1 cup butter (or ghee) 3/4 cup honey 1-1 1/2 tsp SCD legal vanilla 1/4 cup peanut butter (I used cashew butter-tasted great_ Cream room temperature butter. (mix it until it starts to lighten) Add honey and vanilla and mix well. Add peanut butter and mix well again. Guest guest Posted February 28, 2006 Report Share Posted February 28, 2006 Karin, I have also decided to homeschool my son at minimum for kindergarten until he is able to independently say " no " when others offer food. He is in preschool now and only goes 2 days a week when his hab worker is with him because the school will not guarantee that he will be kept away from other people's food (very ridiculous, if you ask me). Snack time is only for one half hour and they refuse to be responsible for him during this time. Their response is " well, you should put him back in a contained classroom so he can be monitored more closely " . I fought hard to put him into an inclusion preschool class. He is in a class with 20 NT children and is doing extremely well! The only problem is during snack time. I don't think you are crazy. Check for homeschooling groups in your area for adequate socialization time. For me, it's more of a matter of knowing my children and knowing how they learn. I'd rather do it myself than fight the school.
