No rice milk ice cream because rice isn't allowed on SCD. There are a

few ice cream recipes on pecanbread.com. Have you tried any of them yet?

I would just make cupcakes for the first birthday party. You can make

the frosting from BTVC and then decorate the tops with tiny plastic

toys if needed.

For the party that you are in control of, I've found that cupcakes

work nicely for that as well. Most kids that I've served do like the

cashew butter muffins (pecanbread.com).

If you are looking for a more traditional cake, the apple carrot cake

that I make turns out very nice and can be cut into slices. It can

also be frosted using one of the frosting recipes in BTVC.

For other things to serve at the party: oranges cut into 8ths, slices

apples (soak in lemon juice to prevent browning), grapes, raisins and

fruit juice. All easy to serve and most kids like a least one of

those fruits. I've also put out a veggie tray with dip. Some kids

will eat it, many will not.

prepared my son's plate and walked around with the fruit tray and could not

believe at the kids that wanted fruit. I also had soda's and water. It

worked out well.

Okay, no rice. Then what do I give my rice milk drinking ds instead of

rice milk? I do not want to give him soy b/c it's not good for boys

in large quantities(he has it in cereal and a cup at bedtime)?

Have you started SCD yet?

Or are you just considering it?

What does your child eat now?

I gave my suggestion for replacing rice milk as using homemade coconut

milk, using 2-3 the amount of water as the recipe calls for.

After straining the milk, put it back into the blender and adding

honey until it is a sweet as the rice milk.

Not having consumed any rice milk in ages (and never liking it), I am

not able to tell you exactly how much honey it will take to make it as

sweet as rice milk. You'll have to add a TBL and taste it and

continue to add until you get it " right " .

My kids drink 1/2 juice 1/2 water. What kind of cerial do you use.

I have never seen a SCD legal cerial. We have muffins, eggs,

pancakes, homemade sausage, etc. for breakfast.

Well, right now he's eating all his usual stuff b/c we haven't started

the diet yet. The book will be here this afternoon and I haven't had

time to read the into diet online yet(well, I read it, just didn't

really abosorb what it said, so I need to read it again).

Can someone post a small menu or something of what your kid(s) eat in

one day? I'm just curious.. And do all the veggies have to be cooked?

Todays Menu:

Break: Pancakes/Sausage/1/2&1/2 juice

Snack: Cookie

Lunch: Left over pizza from last night

Snack: Orange/Carrot/cookie or muffin

Supper: Round steak/ Peas/ Butternut squarsh

Snack: Fruit/cookie or muffin

They have water or juice at all meals/snacks. My daughter does not

eat much of any of this very good but she didn't eat very good

before either.

It's my birthday today and I'll be treating myself to the cheesecake on page 130

of BTVC.

I can polish off an entire one in two days if not retsrained. I never tire of

that cheesecake

and love the crust too.

Hi Sandy,

I've been making some legal hot cereal lately.

I peel, core and slice up a couple of apples and simmer in water until

soft. Then I throw in some blanched almond flour (but any nut flour

would work well) and let it simmer down until desired thickness. I

allow it to cool slightly and add some yogurt (or nut yogurt/nut

milk). Adding some cinnamon is nice. You could add honey but I find

the apples make it pretty sweet.

My kids like the granola cookies (in BTVC) crumbled with yogurt and a

sliced ripe banana as a cold cereal.
