I just got my 'Grain Free Gourmet' book and she lists ginger as non legal and that you need to by fresh. How long will ginger keep? I don't use that much and it would be expensive if I needed to by a piece of fresh everytime I wanted to use a little. I am feeling a little frazzled with all of this.
