How long to wait for yogurt to set?

The eight hour setting time in the fridge gives it a firm texture. When you

taste it earlier it

can be kind of mushy but it has already been properly incubated to foster the

good

bacteria.

And if and when you drip it through a filter or cheesecloth (takes another few

hours) it's a

combination of velvet and satin!

If you drip yogurt, the result will be a smooth product somewhere between sour

crem and

cream cheese in texture. DCCC is grainy. Both can be used in a cheesecake for

example.

The dripped yogurt will make a creamier cheescake than the DCCC.
