I guess high levels can lead to blue baby syndrome. I think this discussion at the wholesome babyfood link is reasonable. Sounds like maybe you should just wait til the baby is 8 months old. It does also look like organic would be better. This is from one of the websites below: " I got this response from the American Dietetic Association: " Due to fertilization, root vegetables may contain small amounts of nitrites. We would recommend that you utilize organically grown produce if this a concern. If prepared and stored in a safe manner, homemade babyfood is fine.
