Starting all over again

Hi everyone,

My son was on the SCD from 1/04 to 1/05 with little

improvement. He has since gone through 7 months of Chelation and

other therapies which seem to be helping, but we can still not

achieve gut health (mushy light colored stools) I would like to

start the SCD all over again. However, I now have a very strong

willed, picky 6 year old. I can not get him to eat many of the

early stage foods. My big problem is lunch at school. He will eat

the chicken tots, but I think he is not ready for fried foods yet.

He will not eat pancakes or flatbreads either. He will eat muffins,

but has a huge appetite and needs a lot to fill him. He would eat

meatballs, but I can not get them to taste " regular " . I would also

love a recipe for ketchup. I can't find my copy of BTVC, but will

buy a new one soon.

Thanks Sheila,

I usually just use GF breadcrumbs, eggs and a few spices, mostly garlic. I

have tried it with nut flour and he doesn't like the texture. I was thinking

maybe toasting some flatbread and crushing it to make crumbs. Do you think it

might work?

Thanks for the ketchup recipe. I will make it tonight. I washed out an old

Heinz bottle and will hope he doesn't notice.

What do you normally put in meatballs? Maybe we can make some

suggestions for SCD legal substitutes.

From BTVC:

" Ketchup

2 cups tomato juice

1-3 tbsp white vinegar

honey and/or saccharine to taste

bay leaf (optional)

salt and pepper to taste

Mix all ingredients except sweetener and immer on stove until thick,

stirring often to prevent sticking.

When almost the desired thickness, add sweetener to taste and

complete cooking.

Ladle into sterilized jars and seal immediately OR place in small

containers and freeze. "
