Do you have a dehydrator? If not, they're pretty inexpensive from Walmart.

You could salt and dehydrate veggie slices, such as sliced carrots and

beets.

For a great crunchy snack, althougth they're not salty, try the apple chips

from www.digestivewellness.com

..

On occasion I use fesh sliced mushrooms, place on a baking sheet or parchment

paper,

spray with oil and bake in a medium oven until they get cripsy.
